The Art of Italian Cooking at Casa Artusi

Casa Artusi is a culinary institution in Folimpopoli, Italy, named after Pellegrino Artusi. He wrote “The Science of Cooking and the Art of Eating Well” (originally entitled La Scienza in Cucina e l’Arte di Mangiare Bene) which is a compilation of recipes from different Italian homes during the 1800s.
Last January, Margarita Fores launched a second pilot class in Pasta Making. This is a little preview of what Casa Artusi’s first overseas campus has to offer. We were taught how to make fresh pasta from scratch and how to cook dry pasta at home. Whichever method you choose, the secret to a great dish is to use the freshest ingredients available.
Casa Artusi’s Manila campus will soon open its doors at Whitespace (2314 Chino Roces extension).
