Pasteleria Mallorca’s Argellanas

Have you had these? It’s kinda crazy. Probably goes around and does the rounds most during Christmastime (explaining the many odes to it’s goodness online). Whereas it’ll probably remind you of an otap; the Argellana is less dense and flakier. And uses tons of butter. Well, not as sloshed and swimming in it as a Kouign Amann but you’ll definitely pickup that richness from the lightly hued, beautifully shingled insides. The tops are glazed with crisp golden caramel and the deep brown outsides provide this lovely yielding crunch.

I wouldn’t say it’s so sweet as it has a slightly savory quality to it that balances with the sugar. And you know how salty and sweet combinations screw up your taste buds and make you want eat more. I had to keep the box at least six feet away from me at all times so as I wouldn’t devour the whole thing in one go. An exercise in EQ. But hey, good news is that it’s available year round. Along with Pasteleria Mallorca’s other specialities. So call their number. Try it, maybe?

    They sell one of the best (if not the best) old style ensaimadas and pallilos de milan too.

    Hi Cyrene, yes, their ensaimadas are quite famous but have never tried the palillos. I love how it's a specialized bakery.
